Susan Catherine (Kitty) Schaefer, born in Covington, TN on July 30, 1942, to Daniel Frederick and Mary Tom Lindsey Jennings, passed away at her home in Ste. Genevieve, MO, on Sunday, March 9, 2025.
Kitty was a graduate of Byars Hall High School and attended Memphis State University. She started a career at the Covington Leader in the composition room and soon became the editor of the “society section” of the paper, where her outstanding work received recognition numerous times by the Tennessee Press Association. In 1978, upon leaving her wonderful job at The Leader, she worked as a group sales representative for Equitable Life Assurance. She was awarded top salesperson several years before leaving that position and relocating to Mississippi. Living near Oxford, she worked for the University of Mississippi before moving back to Tennessee.
After retiring, Kitty and several of her high school friends, who nicknamed themselves “The Deltas,” traveled many places, some as near as Destin and Charleston, and others as far as London and Greece. These treasured friends were a huge part of her life. She met her devoted husband of 13 years, Alan Schaefer, of Bloomsdale, MO, and lived out her last years with him on his farm in Missouri. They shared their love of travel and so many other common interests.
In addition to her husband, she is survived by her only daughter, Paige Scott and her favorite son-in-law Neil. She was blessed with two amazing grandchildren as well – a grandson, Ryen Scott (Brittny) and granddaughter, Laurell Sampson (Chance.) She is also survived by her great grandchildren, Lexi Scott, Peyton Scott, Neyland Scott, McCallie Sampson and Tennessee Sampson. She was preceded in death by her brother, Dan Jennings, and her nephew, Christopher Jennings, but survived by a wonderful sister-in-law, Kay Cothran Jennings, and a special niece, Courtney Wright (Jim) both of Dallas, TX, and a step-daughter, Carol Berryman (Don) of Iuka, MS.
Additionally, she is survived by a step-daughter, Sandra Schaefer Cabot (David), step-daughter, Kathleen Schaefer, step-grandchildren, Brandon (Jessie) Cabot and Emily Cabot; step-great-granddaughters, Madeline, Charlotte, and Isabelle, all in Missouri, as well as her furry friends, Pupknuckle, Mamma Cat, Eenie, and Tom Boy.
Funeral services for Kitty will be held on Saturday, March 15, at 11a.m. in the chapel of Covington Funeral Home, with interment to follow in R. H. Munford Cemetery. Visitation for friends and family will be held the evening prior at the funeral home, from 5pm until 7pm, and again one hour before service time on Saturday.
